Anyone who has lived in Vero Beach for any length of time has seen restaurants come and go. Ask restaurateur John Marx the recipe for a successful venture and he will tell you that it’s all about the formula. “I have an unbelievable fascination for how business operates,” he says. “The business model is systems-driven. You can’t see the systems but behind every successful business is a formula that works.”
John exudes a quiet charm and bonhomie, but don’t let his unassuming demeanor fool you. He is a powerhouse of business acumen, having been at the helm of three of Vero Beach’s most longstanding and successful businesses – Chelsea’s, Lemon Tree and most recently, the Polo Grill which he has, incidentally, owned twice.
