As we pull into the parking lot, the smell of fresh, warm tortillas drifts indolently from the back room of the small Fellsmere grocery store known as the Garcia Plaza Bakery. It’s just before 9 a.m., and the tortilla makers have already been at work for hours making fresh corn tortillas as well as handmade pastries.
We talk with Salvador Magana, the manager of the store/bakery/tortilla factory. The owners, his cousin Herlindo and wife Maria, returned from Mexico the first week in August, he explains. “When we started a few years ago, we began with nothing. We didn’t know what we were doing. We used maybe six bags of cornmeal a week. Now we use at least a thousand.”
The bags weigh 50 pounds a piece – 25 tons of cornmeal a week.
