Face it, we all have good intentions to eat a healthier diet as a new year rolls around but sometimes busy schedules keep us from our goals. So this month I’m going to show you how to eat healthy and save time by having salads packed and ready to go at a moment’s notice. These pretty, layered salads can be made ahead of time, packed in a sealable jar and still be fresh and tasty a week later. You can use any wide-mouthed glass jars you happen to have on hand – from empty spaghetti sauce jars to Mason jars – so you’ll always have a healthy, nutritious salad to go. Glass jars, unlike plastic lunch containers, keep the layered ingredients separate from the dressing and when you extract all the air they will stay fresh in the refrigerator for up to a week or longer. It’s the perfect way to stick to that New Year’s resolution and feel good as well.
